Resolve to be HAPPY!

The new year is here and many of you are resolving to de-clutter, lose weight or get rid of bad habits. Instead of thinking about what you want to get rid of this year, have you taken the time to think about what you want GET??  Might I suggest that you resolve to get happy this year! That’s right, make the decision to find a little happy in everything and stir up some more joy in 2012.  We have started a happy board over on Pinterest to keep ourselves thinking happy thoughts all year long. Christmas Checklist…

Four days and counting until the big day! Are you like me and still doing your last minute decorating, baking and shopping, or do you have everything already wrapped up under a perfectly decorated tree?

Let’s see if you have made your list and checked it twice…

1. Are these all hung??

2. Are these all wrapped??

3. Are these all baked??

If you have checked all three things off your list, you can now commence with this…

After all the hustle and bustle leading up to Christmas settles down and you’ve hung your stockings on the chimney with care, my wish for you is that you will find yourself surrounded by your loved ones doing whatever it is that makes you happy

Warm Wishes from The Curious Cook

Creamy Potato Soup is something that my mother Linda always made for me when I was a child…

Traditionally,  we would eat it while watching one of the Christmas shows that came on only once a year like Frosty, Rudolph or Charlie Brown Christmas.  Other times, mom would make it without our asking when we were not feeling well and needed some TLC!  It was always made and served with love and one of the many fond food memories I have of growing up surrounded by orange groves in Weirsdale, Florida. You’ll find the recipe for my Creamy Potato Soup on page 134 of The Happy Everything Cookbook. It is the perfect pairing for these yummy sandwiches…

Prosciutto, Pear & Blue Cheese Sandwiches with Fig Jam have all the yummy tastes you love and associate with the Christmas Season… oven toasted artisan bread smeared with soft butter, sweet honey, peppery arugula, a dab of Dijon, salty prosciutto, creamy blue cheese and slices of ripe pear… topped off with homemade fig jam! I just can’t imagine anything tasting better to me right now!  This truly gourmet sandwich is the perfect holiday companion to the homemade soups featured in The Happy Everything Cookbook. You’ll find the sandwich recipe on page 137 and the fig jam recipe on page 139.

The Homemade Tomato Soup featured in The Happy Everything Cookbook could not be easier to make and is the perfect thing to serve for your tree trimming gathering with family and friends.
Or, sip Homemade Tomato Soup while sitting by the fire on a chilly evening enjoying a nice glass of wine & reading your book or watching your favorite holiday movie… now that sounds like a plan!
Be sure to use extra ripe tomatoes, and once you grate a tomato, I promise you will never blanch tomatoes again!  {See directions for grating a tomato on page 132 of The Happy Everything Cookbook.} The green basil leaf garnish makes it look and taste like the holidays & serving it in a cute Coton Colors mug always makes me happy!  Enjoy!!
